









Once upon a time, our founder Kata set out to create the most deliciously unique bonbons in all the land.
Humble beginnings
Our story starts in the back kitchen of Toronto’s De Mello Coffee, where Kata works as a baker. A pastry chef by trade, she starts making her own bonbons and yearns to share them with the world.
Talk of the show
After months spent perfecting her bonbons, Kata pulls up to Toronto’s One of A Kind artisan show with a bunch of handcrafted chocolates and a dream. To Kata’s delight, they sell out almost immediately, becoming the
talk of the show.
A leap of faith
Emboldened by the success of the show, Kata takes a big leap of faith. She signs her first lease and opens up Lion Coffee on St. Clair W with her friend Hazel.
On the rise
Kata hires her very first employee, Hannah (now our Executive Chef!), to help grow Chocolat de Kat to new heights.
A fresh start
We begin to grow fast and decide to move to a brand new space on St. Clair W in partnership with De Mello Coffee.
A family affair
Kata’s husband Rob leaves the corporate word and joins CDK full time — with a business background and a brain for systems, he is just the person we need to keep forging ahead!
Down the rabbit hole
Fueled by the love of our amazing customers, we open up our very own chocolate factory (and a secret lil’ shop!) on Campbell Ave.
The more the merrier

Our small yet mighty team keeps on growing, and we couldn’t be more proud to create chocolate magic with the most talented and caring folks!
Making of a brand
As we grow beyond our local roots, Kata calls on her sister Julia — formerly our secret-weapon designer, now Creative Director — to reshape what Chocolat de Kat looks and feels like to the world. With her eye for storytelling, she begins growing us into a beloved Canadian brand. ✨
Our process
Step 1







It starts with an idea
Every new bonbon starts with a big, bold idea for a flavour. From key lime pie to Santa’s cookies, we strive to recreate the most delicious flavours in the form of a tiny, scrumptious bonbon.
Perfecting the recipe
Once we’ve aligned on a new flavour, our expert chocolatiers undergo anywhere from 5 to 10 rounds of iteration to perfect the texture, flavour, and wow factor of each bite. Taste testing is a must!
Getting down to business
Once the recipe has been perfected, it’s time to get to work. We hand polish our chocolate moulds and carefully decorate each one with coloured cocoa butter, then let them dry overnight.
A work of art
The next day, we use tempered chocolate to create a thin outer shell for each bonbon. We then make the fillings and layer them inside, letting the chocolates rest for one more day.
Finishing touches
The following morning, we apply additional tempered chocolate to the base of each bonbon to seal in the deliciousness.
Tada! A bonbon is born

I love spending time in the sun! Tanning by the beach, making bracelets and listening to my favourite pop girls. I’m the one in the all yellow outfit! When inside, I’m usually watching Drag Race, playing board games, or at the opera with my Grams!
